French Pancake Recipe

Traditional French pancakes.

Homemade french pancakes

This recipe yields about 12 pancakes.


  • Cake flour, 250 g (1 3/4 cups)
  • Salt, 1/8 tsp
  • Granulated sugar, 50 g (1/4 cup)
  • Egg (room temperature), 3 medium
  • Milk (whole), 500 ml (2 cups)
  • Vegetable oil (canola oil), 30 ml (2 Tbsp)
  • Vanilla extract, 1/4 tsp



  1. In a bowl, sift together flour and salt
  2. Add the sugar and mix well
  3. Make a well in the center of the flour mixture and add the eggs and vanilla extract
  4. Beat the eggs into the flour mixture until combined
  5. Gradually pour in the milk and continue to beat until fully incorporated
  6. Add the oil and continue to beat until smooth
  7. Sieve the pancake batter to eliminate all lumps
  8. Cover the pancake batter with a tea towel and leave to rest for about 2 hours at room temperature


  1. Heat a 24 cm non-stick frying pan until hot but not searing
  2. Lightly butter the frying pan (the butter should foam but not darken)
  3. With a ladle, pour about 70 ml of pancake batter into the center of the frying pan and coat the surface evenly with a tilting circular motion
  4. Higher the heat and cook the pancake for about 1 minute until the edges are golden brown and detach from the sides of the frying pan
  5. With a spatula, turn over the pancake
  6. Lower the heat and cook the pancake for about 1 more minute until golden brown

How to serve

Serve hot with butter, sugar, jam, or maple syrup.
