French Pancake Recipe
Traditional French pancakes.
Homemade french pancakes
This recipe yields about 12 pancakes.
Ingredients
- Cake flour, 250 g (1 3/4 cups)
- Salt, 1/8 tsp
- Granulated sugar, 50 g (1/4 cup)
- Egg (room temperature), 3 medium
- Milk (whole), 500 ml (2 cups)
- Vegetable oil (canola oil), 30 ml (2 Tbsp)
- Vanilla extract, 1/4 tsp
Directions
Batter:
- In a bowl, sift together flour and salt
- Add the sugar and mix well
- Make a well in the center of the flour mixture and add the eggs and vanilla extract
- Beat the eggs into the flour mixture until combined
- Gradually pour in the milk and continue to beat until fully incorporated
- Add the oil and continue to beat until smooth
- Sieve the pancake batter to eliminate all lumps
- Cover the pancake batter with a tea towel and leave to rest for about 2 hours at room temperature
Baking:
- Heat a 24 cm non-stick frying pan until hot but not searing
- Lightly butter the frying pan (the butter should foam but not darken)
- With a ladle, pour about 70 ml of pancake batter into the center of the frying pan and coat the surface evenly with a tilting circular motion
- Higher the heat and cook the pancake for about 1 minute until the edges are golden brown and detach from the sides of the frying pan
- With a spatula, turn over the pancake
- Lower the heat and cook the pancake for about 1 more minute until golden brown
How to serve
Serve hot with butter, sugar, jam, or maple syrup.
